谷朊粉又稱活性面筋粉、小麥面筋蛋白,是從小麥(面粉)中提取出來的天然蛋白質,由多種氨基酸組成,蛋白質含量高達 75%85%,含有人體必須的十五種氨基酸,是營養豐富的植物蛋白資源.具有粘性、彈性、延伸性、薄膜成型性和吸脂性. 谷朊粉是一種優良的面團改良劑,廣泛用于面包、面條、方便面的生產中,也可用與肉類制品中作為保水劑,同時也是高檔水產飼料的基礎原料。

目前國內還把谷朊粉作為一種高效的綠色面粉增筋劑,將其用于高筋粉、面包專用粉的生產,添加量不受限制.谷朊粉還是增加食品中植物蛋白質含量的有效方法。
